Barbarestan is the table that reawakened Georgia's culinary history. The family behind it found an 1874 cookbook by Duchess Barbare Jorjadze — the first written by a Georgian woman — at the Dry Bridge flea market, and built the whole menu from its 800-odd recipes.

The result is Georgian cooking you will not find elsewhere: dishes that fell out of fashion a century ago, served in a warm, lamp-lit room of lace and vintage crockery. The menu rotates with the season, so ask what the kitchen is cooking from the book that week.
