Firuze has been a Baku fixture since 1986, just off Fountain Square in the heart of the city. It is the colourful, carpet-and-copper version of an Azerbaijani dinner — guests famously pose in national kelagai and aragchin among the ornaments.

The kitchen runs the national canon alongside some European dishes: plov, kebabs, dolma and dushbara dumpling soup, cooked with local ingredients in a warm, historic cellar.
