Shirvanshah Museum Restaurant is a set-piece: a labyrinth of themed rooms in a restored 19th-century building in the Old City, its core a converted medieval hammam, filled with antique carpets, jewellery and curiosities that rival a real museum.

The food is the full Azerbaijani canon — plov, kutab, dolma — and many evenings bring live mugham, the UNESCO-listed improvised music. It is where we send guests who want their Baku dinner to be an occasion.
